Yogurt Mix for Plum and Muffins is a simple and quick mixture. It can be used to prepare either plum cake or muffins.
You will obtain some sweets perfect for breakfast and as snack. This mixture is healthy and tasty: it contains few fats but it is really flavourful!

Yogurt Mix for Plum and Muffins
- 300 g of flour;
- 125 g of yogurt;
- 2 eggs;
- 180 g of sugar;
- 90 ml of oil;
- 16 g of baking powder;
- 1 teaspoon of vanilla extract.
- about 1 spoon of cocoa;
- 50 g of drops of chocolate.
Preparing the Yogurt Mix for Plum and Muffins
Grease and flour a plum cake mold or a muffins tray; keep it aside.
Preheat the oven to 180° C in static mode.
Sift the flour with the baking powder and the vanilla.
In a bowl, using the electric whisk, beat the eggs with the sugar until they are soft and spumy. Add the yogurt and the oil. Combine them.
Add the sifted powders into this mixture, few at time. Combine the powders until a uniform mixture is obtained.
Note: We can increase the flavour of this mixture adding some cocoa or some chocolate drops! Divide the mixture in 3 bowls: in one of these add the cocoa; in another add the chocolate drops. We will obtain some different flavours!
Fill the plum cake mold or each muffin cups with the mixture obtained.
Bake for about 30 minutes.
Check the cooking using a skewer: insert it into the center of the cake and then take it out. If it comes out clean, the plumcake is ready! Otherwise, keep baking.
Take the plum cake or the muffins out of the oven and let it cool.
As needed, sprinkle the top with some icing sugar!
