Wholemeal Yoghurt Brioches are very soft, light and delicious. This recipe is very easy and the preparation is very quick.
To realize them we are going to use simple ingredients. In spite of this, we will obtain brioches with a unique flavour, perfect for breakfast and as snack!
Wholemeal Yoghurt Brioches
- 140 g of flour;
- 130 g of wholemeal flour;
- 50 g of brown sugar;
- 60 ml of milk;
- 125 ml of yoghurt;
- 4 g of active dry yeast ;
- 30 g of butter at room temperature ;
- grated orange or lemon rind;
- 1 pinch of salt.
Preparing the Wholemeal Yoghurt Brioches
In a bowl combine the flours with the yeast and the sugar.
Begin to knead, adding few milk a time. Add then the yoghurt and keep kneading.
When the ingredients are combined, add the butter in cubes. Knead until the butter is combined with the dough. Add a pinch of salt and mix it.
Transfer the dough onto a lightly floured surface. Knead for a couple of minutes and give the dough a ball shape.
Transfer it in a bowl and cover with cling film.
Let the dough rest at room temperature for 30 minutes. Then transfer it into the fridge for at least 4 hours.
Note: If we prepare the dough in the evening, we can let it into the fridge all night!
Take the dough from the fridge and let it stand at room temperature to rise, until doubled in size.
Shaping the Wholemeal Yoghurt Brioches
Turn the dough out onto a lightly floured surface. Press it gently with your hands. Roll it out to a circular shape with an even thickness of about 4-5 mm.
Cut many discs using a cookie cutter.
Take three discs at time and overlap each one to the other. Roll from left to right, in order to obtain a cylinder. Cut the cylinder in the middle: we will obtain two flowers!

Arrange the obtained flowers in the baking tray you prefer (I used small plum cake trays to obtain single portions).
Alternatively, to save time, you can divide the dough into small balls and arrange them into the baking trays.
Let the brioches rise until they double in size.
Cooking the Wholemeal Yoghurt Brioches
Preheat the oven to 180° C in convection mode.
Spread the top of the brioches with some milk and sprinkle them with brown sugar.
Bake the Wholemeal Yoghurt Brioches for about 15 minutes, or until they are gold.
Take them out of the oven and let them cool!
