White Fish in Tomatoes Pine Nut Sauce is a healthy and savoury dish. This recipe is simple and quick: everybody can prepare it. It is also suitable for who doesn’t like handling the fish (like me!).
The result is a colourful, tasty and fragrant dish: perfect for the incoming season!
White Fish in Tomatoes Pine Nut Sauce
Ingredients (for 2 people):
- 500 g of white fish like cod;
- 400 g of cherry tomatoes;
- 1 shallot;
- 2 tablespoons of pine nuts;
- 1 teaspoon of capers;
- flour a.r.;
- leaves of basil a.r.;
- oil, salt and pepper a.r..
Preparing the White Fish in Tomatoes Pine Nut Sauce
Wash the cherry tomatoes and slice them; slice the shallot; rinse the capers and mince them.
Put some flour into a dish to roll the fish.
Wash the fish and dry it out using a clean cloth. Cut it in slices and roll each of them into the flour: we must roll all the edges of the fish.
Warm two spoons of oil into a non stick pan and brown the fish slices on each and every edge.
Add then 2/3 of tomatoes, the shallot and 1 spoon of minced pine nuts. Gently stir the ingredients.
Close the pan with a lid and cook for about ten minutes at low/medium heat.
Remove the lid, increase the heat to dry a little the sauce.
Add the remaining tomatoes and flavour with salt and pepper.
Serve the fish garnishing it with some leaves of basil and the remaining pine nuts.
