White Asparagus Soup is a tasty and creamy dish! We can prepare this recipe with no effort: it is simple and rather quick!

White Asparagus Soup
Ingredients (for 4 people):
- 500 g of white asparagus;
- 200 g of potatoes;
- 1 shallot;
- 150 g of bacon in cubes;
- 1 l of water;
- 1 tablespoon of oil;
- 1 tablespoon of flour;
- chives a.r.;
- salt and pepper a.r..
Preparing the White Asparagus Soup
Wash very well the asparagus. Remove the toughest part of their stem. Cut away the stringy exterior part of the asparagus using a knife or a potato peeler: don’t throw it away, just keep it aside! Cut the asparagus in pieces.
Bring the water to boil and add a pinch of coarse salt. Bring to boil again and pour the part of the asparagus, the one we cut away just a moment ago, into it.
Cook for about 15-20 minutes.
In the meantime wash and peel the potatoes. Cut them in small pieces and slice the shallot.
In another pot cook the bacon for a couple of minutes. Remove the excess of fat, using a spoon. Keep some pieces of bacon aside to dress our dish before serving it.
Add the asparagus and the potatoes. Stir and let them flavour.
Pour the hot broth onto the vegetables until they are fully covered (be careful not to drop into the pot the boiled exterior part of the asparagus). Cook for about 20 minutes.
When the vegetables are soft, blend them using a immersion blender until a smooth cream is obtained.
In a cup mix together the spoon of oil with the spoon of flour. Add half glass of broth, few at time. Stir until a smooth mixture is obtained.
Add this mixture into the vegetable puree. Cook again for a couple of minutes.
We will obtain a very softy and creamy soup with this method!
Flavour with salt and pepper.
Note: Be careful, taste it! Because the bacon adds a lot of flavour!
Serve the White Asparagus Soup and garnish it with the bacon kept aside and some chives.
