Strawberry Zebra Cake

Strawberry Zebra Cake is at the same really beautiful to see and very tasty! It’s more than meet the eyes.

This cake is perfect for breakfast or as snack. It contains butter: it is replaced by the oil.

We can eat this delicious sweet without remorse!

Strawberry Zebra Cake is very soft and fragrant!

Strawberry Zebra Cake

Ingredients (for a cake pan of 24 cm diameter):

  • 300 g of flour;
  • 220 g of sugar;
  • 4 eggs;
  • 100 ml of oil;
  • 50 ml + 20 ml of water;
  • 8 g of baking powder;
  • 80 g of strawberries;
  • 1 lemon;
  • 1 pinch of salt;
  • icing sugar to garnish.

Preparing the Strawberry Zebra Cake

Grease and flour the cake pan and let it aside.

In a bowl sift the flour with the baking powder and the salt.

Wash the strawberries and remove the green part from them. Cut the strawberries in pieces. Blend them using a blender until a puree is obtained.

Divide the egg yolks from the white.

Beat the egg yolks with 150 g of  sugar, using an electric whisk. Keep beating until they get light and spumy.

Add the oil, few at time, alternating with the sifted powders.

Add the remaining sugar and the grated lemon peel.

Note: During this step, if the mixture is too firm and/or difficult to stir, add few water at time (not more then 50 ml) to make it soft. Take into account that we must add the egg whites and the strawberry puree: these ingredients contribute in making the mixture more fluid.

Beat the egg whites until they are firm, using the electric whisk.

Add them at the previous mixture: using a spoon or a spatula fold them together, making gentle movements from the bottom to the top.

Divide the mixture obtained into two bowls. In one of these add the strawberry puree and stir it.

Note: To obtain a more saturated colour we can add some drops of pink food colouring.

At the white mixture add few water (about 20 ml) and stir it: we should obtain two mixtures with the same consistence.

The zebra effect

To obtain the zebra effect we must pour onto the centre of the cake pan 3 spoons of white mixture, then pour the same quantity of pink mixture on top of the white one.

Repeat the process until our mixtures are over.

Cooking the Strawberry Zebra Cake

Preheat the oven to 170° C in static mode.

Bake the Strawberry Zebra Cake for about 45 minutes.

Check the cooking using a skewer. Insert it into the centre of the cake and f it comes out clean, the cake is ready!

Take the cake out of the oven and let it cool before sprinkling its top with some icing sugar!
