Spiced Pumpkin Focaccia is a very soft and savoury leavened product. It is fragrant and rich in flavour.
It is perfect to match a meal in place of the bread but it can also be filled with soft cheese or ham or both or…what you prefer!
Spiced Pumpkin Focaccia
- 250 g of pumpkin pulp;
- 240 ml of water;
- 500 g of flour + the quantity to flour the surface;
- 2 spoons of olive oil;
- 2 teaspoons of salt;
- 1 teaspoon of dried active yeast;
- 1/2 teaspoon of sugar;
- 10 leaves of sage;
- 10 leaves of oregano;
- thyme a.r..
Preparing the Spiced Pumpkin Focaccia
Preparation day 1 – at any hour
Mince the spices using a knife and keep them aside.
Cut the pumpkin pulp in cubes. Boil or steam it until it gets soft; conserve 240 ml of cooking water and let them cool.
Then, put the pumpkin in a bowl and smash it using a fork until a soft puree is obtained. Add the flour, the minced spices, the yeast and the sugar. Stir with a wooden spoon to combine the ingredients.
Add the water few at time, kneading with the spoon. When the whole quantity of water is absorbed, add the salt and mix it.
Turn the dough onto a floured surface, knead quickly with your hands and shape the dough in a ball.
Grease a clean bowl and put the dough into it. Seal the bowl with cling film and store it into the fridge for the whole night.
Preparation day 2 – at any hour
On the next day, take the dough out of the fridge and let it stand at room temperature for about 2 hours.
Grease a cake pan of about 26 cm diameter (or two smaller cake pans) and turn the dough into it.
Press it with your fingers to spread it over the whole cake pan surface. Once done, seal the cake pan with cling film and let it rise until doubled in size.
Bake the Spiced Pumpkin Focaccia
Preheat the oven to 190° C in convection mode.
Make some holes onto the focaccia surface with your fingers.
Pour two tablespoons of oil onto the focaccia surface and sprinkle it with a spoon of salt.
Bake the Spiced Pumpkin Focaccia for about 40 minutes, or until the top is golden brown.
Take it out of the oven and let it cool onto a wire rack.
