Spelt Small Breads

Spelt Small Breads are prepared with the sour-dough starter, but they are very easy to realize!

They are very flavorful and they are perfect to fill with cured meats and/or cheeses. We can prepare them for every occasion, like for example buffets, birthday parties or for outdoor lunches.

Spelt Small Breads

Ingredients (about 8 servings):

  • 250 g of ripe sour-dough starter;
  • 150 g of spelt flour;
  • 150 g of strong flour;
  • 150 ml of water;
  • 2 tablespoons of oil;
  • 1 teaspoon of sugar/honey;
  • 1 teaspoon of salt;
  • sesame and flax seeds a.r..

Preparing the Spelt Small Breads

Since the Spelt Small Breads preparation process spans over two days, I am proposing you a timetable to have them ready for lunch time. I will refer to the days as “preparation day” and “baking day”. You can find below the (rough) timeline and the directions.

Preparation day – 4:15 PM

Pour the sour-dough, the water, the sugar and the oil in a bowl. Melt the sour-dough using a whisk. Mix vigorously until a foam is obtained.

Pour the flours and combine them vigorously. Add the salt and combine it.

Cover the dough with cling film and let it stand for about 20 minutes.

Preparation day – 5:00 PM

Once this time has passed, let’s get back to the dough. To give strength and consistency, fold it following the Strech & Fold method.

Cover the dough again with cling film and transfer it into the fridge for all night.

Baking day – 7:00 AM

Take the dough out of the fridge. Let the dough into the bowl and let it rest at room temperature until lunch time (about 5 hours).

Baking day – 12 noon

Sprinkle a surface with some flour. Turn the dough out onto this surface. Roll the dough out to rectangular shape using your hands.

With a knife, cut 8 small triangular shapes.

Line a baking tray with baking paper. Arrange the small breads onto the tray, distance them evenly.

Let them rise until double size.

Cooking the Spelt Small Breads

Preheat the oven to 200° C.

Wet the top of the breads with a few water. Sprinkle the surface with sesame and flax seeds.

Bake the breads, turn the temperature of the oven up to 240° C. Bake for about 25 minutes.

Take the Spelt Small Breads out of the oven and let cool before cutting them!
