Special Apple Pie is a delicious and tasty cake. I think it is one of the best cakes I ever prepared! This pie is both a cake and a tart. In fact, the pie base is made of shortcrust pastry and it is filled by a soft sponge cake, garnished with some apple slices… You should try it out!
I took inspiration from Ernest Knam’s recipe, but used my own recipe for the shortcrust pastry.

Special Apple Pie
Ingredients for the base:
- 300 g of shortcrust pastry.
Ingredients for the filling:
- 250 g of butter;
- 180 g of brown sugar;
- 2 eggs;
- 120 g of flour;
- 1 teaspoon of baking powder;
- grated peel of 1 lemon;
- cinnamon a.r. (optional);
- 1 pinch of salt.
Ingredients to garnish:
- 1 apple;
- 1/2 lemon.
Preparing the Special Apple Pie
Preparing the shortcrust pastry
Following my recipe, let’s prepare the shortcrust pastry.
Note: With the my shortcrust pastry recipe we obtain a great quantity of pastry. With the remaining pastry we could prepare some biscuits or conserve it into the fridge up to 1 week and use it for other preparations. We could also half the doses of the shortcrust pastry recipe.
Roll the pastry out to a circular shape of about 4 mm in thickness.
Grease and flour a cake pan of about 24 cm diameter.
Arrange the pastry onto the cake pan prepared, keeping high the edges of the shortcrust pastry. Make some small holes onto the base of the cake. Cover with cling film and let it rest into the fridge until we are going to use it.
Preparing the filling
Preheat the oven to 180°C in static mode.
Sift the flour, the baking powder, the salt and a pinch of cinnamon (if you like it!).
Using a spoon, beat the butter with the sugar until a soft cream is obtained. Add the eggs; combine them using an electric whisk.
Add the sifted powder and combine it until a soft and smooth mixture is obtained.
Take the cake pan out of the fridge. Cover it with the soft mixture prepared before.
Slice the apple and dip it into the lemon juice.
Garnish the top of the cake with the apple slices.
Note: We can put some apple slices into the soft mixture, as well.
Cooking the Special Apple Pie
Bake the cake for about 45 minutes.
Check the bake before pulling the pie out of the oven: insert a skewer into the center of the cake. If it comes out clean, the pie is ready!
Take the Special Apple Pie out of the oven and let it cool!
Sprinkle it with icing sugar as needed!
