Soft Strawberries Cake is very easy and quick to prepare: it only takes about 30 minutes to realise this delicious treat!
I used the strawberries, but they can be replace with other fruits, as you prefer! The more fruits you use, the more flavourful the cake will get!
Soft Strawberries Cake
Ingredients (for a cake pan of 22 cm diameter):
- 125 g of soft butter;
- 125 g of sugar;
- 125 g of flour;
- 2 eggs at room temperature;
- 8 g of baking powder;
- 1 teaspoon of vanilla extract;
- about 200 g of strawberries;
- icing sugar a.r..
Preparation of Soft Strawberries Cake
Line a cake pan with baking paper.
Wash and dry the strawberries, cutting the green part of them out. Cut them in cubes or in slices, as you want.
Separate the eggs yolk from the whites and, once done, put them in two separate bowl.
Preheat the oven to 180° C in static mode.
In another bowl, sift the flour with the baking powder and the vanilla.
Afterwards, put the butter and the sugar in a ample bowl.
Beat them together until they are combined, using the electric whisk .
Add the yolks, one at time, and mix them.
Beat the egg whites using the electric whisk until a firm mass is obtained.
Add this mass into the previous mixture and combine the mass with gentle movement from the bottom to the top, using a spatula or a wooden spoon.
Now, we must add the powders, few at time. Carry on to combine them with the same movement.
Pour the obtained mixture into the cake pan prepared before.
Garnish the top of the cake with the strawberries. In decorating the cake, let your creativity be the limit.
Bake the Soft Strawberries Cake
Bake the Soft Strawberries Cake for about 40 minutes.
Check the cooking with a skewer: if you insert it in the centre of the cake and it comes out clean, then the cake is ready!
Take it out of the oven and let it cool before sprinkling the top with some icing sugar.
