Soft Potato Croquettes are very easy and fast to prepare. They are perfect for a starter or as a second course.
They are practical to bring as packed lunch: they can even be realized the day before eating them and they can also be eaten at ambient temperature.
They are very special because they have a melting heart! As needed, they can be enhanced with the cubes of ham or bacon!
But now, we look at how to prepare them!
Soft Potato Croquettes
- 250 g of boiled and mashed potatoes;
- 1 egg;
- 20 g of grated Parmesan cheese;
- cubes of cheese like cheddar a.r.;
- breadcrumbs and parsley a.r.;
- salt and pepper a.r..
Preparing the Soft Potato Croquettes
In a bowl stir together the mashed potatoes, the yolk, the Parmesan cheese, the salt (circa 1/2 teaspoon) and pepper as needed.
We should obtain a soft and uniform mixture.
Take in your hands a little of this mix.
Flatten it to make a circle and put in the centre a cube of cheese.
Now wrap it to make a ball.
In a soup plate beat a little the egg white.
In another soup plate mix together few breadcrumbs and parsley as needed.
Roll the croquettes before in the egg white, then in the breadcrumbs mix.
Cover a tin with baking paper and lay the croquettes on it.
Cook them in the oven to 180° C for about 20 minutes, or until they are gold.
Take the Soft Potato Croquettes out of the oven and enjoy them!
