Have you ever tried to prepare the Small Water Gnocchi? I was a bit sceptical in the beginning but, after trying them, I changed my mind!
This recipe is easy and fast. For a first course to prepare at the last minute!
The secret to prepare the small gnocchi is: flour and water in the same quantity!
Small Water Gnocchi
Ingredients (for 2-3 peoples):
- 300 g of flour;
- 300 ml of water;
- salt a.r..
Preparing the Small Water Gnocchi
Warm the water up, bring to boil and then add a teaspoon of salt.
Turn off the stove and pour the sifted flour into the water. Beat vigorously with a wooden spoon.
We will see the flour soaking up all the water!
Transfer the mixture onto a clear surface. Knead (take care not to burn yourself!) until a uniform and firm dough is obtained. This requires very few minutes!
At this point, we can continue like for the classic Potatoes Gnocchi.
Make some small loafs with the dough and slice them to obtain little pieces.
If you haven’t got the specific tool to make the lined gnocchi, you can use a fork!
Arrange the small gnocchi onto a floured surface separating themselves until the you’re ready to cook them.
It is possible prepare them in advance: we must keep the gnocchi in a dry and cool place, covered with a clear rug! But, I suggest you to prepare them just in time to eat them: they are so fast to realize! Fresh is better!
Cooking the Small Water Gnocchi
To cook them: bring the water to boil, add the salt and, wait for the water to boil again.
Plunge the gnocchi. Cook them until they go back to the surface.
We spiced them only with butter, sage and a sprinkle of Parmesan cheese. They are really tasty!
