Roast Pork with Milk is a very easy recipe and it is very tasty. An appetising main course: everybody can prepare it, also who is not so expert in cooking!
I also suggest you to prepare some oven baked potatoes: they are the perfect match for this dish! I leave you my special recipe: you will obtain crunchy potatoes outside and soft inside!
Roast Pork with Milk
Ingredients (for 3 people):
- 500 g of pork fillet in one piece;
- 1/2 l of milk;
- 1 spoon of flour;
- 30 g of butter;
- rosemary and sage a.r.;
- 1 slice of garlic;
- oil, salt and pepper a.r.
Ingredients for the oven potatoes:
- potatoes a.r.;
- 1 spoon of butter or oil;
- oil, salt and pepper a.r.;
- rosemary a.r..
Preparing the Roast Pork with Milk
Tie the pork using the butcher’s twine. Arrange some leaves of sage and some stick of rosemary above the pork and below the chord grids.
In a pot warm the milk.
In another pot melt the butter. Add then the garlic and let it sweat just a bit before adding the fillet. Let the meat brown well on all its sides over medium heat.
Once the pork is brown, pour the hot milk over it. Low the heat, cover with a lid and cook for about 40 minutes. Form time to time, turn the fillet to give it a uniform cooking.
As needed, we can add other leaves of sage and some needles of rosemary.
Halfway in the cooking process, add two pinches of salt and pepper as needed.
Line a surface with tin foil.
When the cooking time is over, transfer the roast pork onto the tin foil and seal it. Let it stand for about 10-15 minutes.
In the meantime filter the milk gravy into a saucepan and put onto the burner, at low heat. Sift the flour into the milk gravy, few at time, stirring with a whisk to avoid the formation of clumps.
Cook until a uniform and dense cream is obtained.
Remove the roast from the tin foil. Remove the butcher’s twine and cut the meat in thin slices. Arrange them into the saucepan where we prepared the milk gravy.
Warm at low heat for a couple of minutes and serve the Roast Pork with Milk when it is still hot!
Preparing the oven baked potatoes
To match the Roast Pork with some delicious oven baked potatoes follow these directions.
Don’t peel the potatoes, parboil them for about 5 minutes (I used the new potatoes).
Drain and cut them in cubes.
Preheat the oven to 180° C in convection mode.
Arrange the cubes in an oven pan. Dress them with a spoon of oil and a piece of butter; flavour with some salt and pepper. Add also some rosemary needles. Stir them well using your hands.
Bake the potatoes for about 30 minutes or until they are brown.
