Potatoes Gnocchi with Pesto is a special dish for us: we love it! My grandmother often prepared them for me and now, it’s me preparing them for my husband and myself!
We think that the pesto Genovese dressing, a typical recipe from Liguria – the region I come from -, is perfect with the potatoes gnocchi. You have to try this first course if you haven’t ever tasted or prepared it before!
This recipe is easy and pretty quick to prepare: everybody can prepare it!
Potatoes Gnocchi with Pesto
Ingredients:
- potatoes gnocchi;
- pesto Genovese;
- coarse salt as needed;
- extra virgin olive oil;
- grated Parmesan Cheese as needed.
Preparing the Potatoes Gnocchi with Pesto

Note: Pesto Genovese is a recipe is for 3 servings. You can prepare the potatoes gnocchi and freeze some of them, otherwise you can double the pesto’s ingredients.
Arrange some pesto Genovese in a great bowl and keep it aside.
Bring to boil a great quantity of water, add two pinch of coarse salt and bring to boil again.
Pour few oil in the water and suddenly pour in the potatoes gnocchi. When they get back to the water surface (beat very gently with a wooden spoon if necessary) dry them using a perforated spoon and arrange them in the bowl with the pesto.
Add the remaining pesto and combine them very gently.
Serve the Potatoes Gnocchi with Pesto with some grated Parmesan Cheese.
