Oven Baked Asparagus Frittata is very easy to prepare! Even if it is realized with few ingredients, we will obtain an appetizing dish!
This frittata is handy to bring at work as lunch box; if we combine it with a small bread, it gets a complete and balanced plate!
I baked the frittata in the oven to avoid using a lot of oil! I always bake the frittatas in the oven to obtain a meal that is low in fat!
Well, besides that there is also another, more practical, reason: I’m not able to overturn the frittata in the pan without tear them down in pieces!
Oven Baked Asparagus Frittata
Ingredients (for a cake pan of 18 cm diameter):
- 350 g of asparagus;
- 1 shallot;
- 2 eggs;
- 40 g of grated Parmesan cheese;
- 50 g of ricotta cheese;
- oil, salt and pepper a.r..
- ham and cheese in cubes.
Preparing the Oven Baked Asparagus Frittata
Remove the hard part of the asparagus. Wash and cut them in small pieces (keep a couple of asparagus in one piece, we will use them later to garnish the top of the frittata!).
Warm a spoon of oil in a non-stick pan. Add the sliced shallot and let it brown. Add the asparagus, cover the pan with a lid and cook for about 10-15 minutes, stirring occasionally, until they are soft. Once soft, turn the heat off and let them cool.
In the meantime line a cake pan with baking paper and keep it aside.
Preheat the oven to 180° C in convection mode.
Divide the yolk eggs from the white; beat the white eggs using the electric whisk until they are firm and spumy.
Keep the uncut asparagus aside. Blend the others until a puree is obtained.
Add the yolk eggs, the ricotta and grated Parmesan cheese (keep a spoon aside) and blend again.
Season with salt and pepper.
Note: Now, as needed, we can add some ham or cheese in cubes.
Pour the mixture into the cake pan we prepared before. Garnish the top of the frittata with the asparagus kept aside.
Sprinkle the surface with the remaining Parmesan cheese.
Bake the frittata for about 30 minutes.
