Meat and Vegetables Rolls

Meat and Vegetables Rolls are very tasty, rich in flavour and light! We can prepare this dish without effort.

This recipe is very easy and quick.

Searching on the web the keyword “meat rolls” will return you a lot of elaborate and complex dishes.

My version is more light and much simpler than others, but as much as tasty!

To increase the flavour, we can add in the ingredients some cheese, like some mozzarella or some fontina!

Meat and Vegetables Rolls

Ingredients (for 2 people):

  • 2 veal escalopes 200 g each;
  • 1 courgette;
  • cherry tomatoes a.r.;
  • 1/2 leek;
  • 1/2 glass of beer;
  • oil, salt and pepper a.r..

Preparing the Meat and Vegetables Rolls

Cut the leek in thin slices. Wash the cherry tomatoes and dry them.

Cut the courgettes in very thin slices: we could use a slicer to help ourselves.

Cut the meat in stripes. This strips must have a width of about 1 cm.

On each strip, arrange a slice of courgette or a cherry tomato. Roll the meat and block it using a skewer.

Cooking the Meat and Vegetable Rolls

In a non-stick saucepan, warm two tablespoons of oil at high heat. Add the leek and stir for two minutes.

Add the meat rolls and let them brown on both sides.

Simmer with the beer and let it evaporate for about two minutes.

Low the heat, cover the pan with a lid and continue cooking for about 5 minutes.

Take the lid off, increase the heat of the stove and reduce the sauce.

Flavour with salt and pepper. Turn the heat off.

Serve the Meat and Vegetables Rolls while still hot!
