Maraschino and Black Cherry Muffins

Maraschino and Black Cherry Muffins are small pastries but very rich in flavour, indeed. They are perfect for a snack with some friends and/or as dessert.

This recipe is very easy and fast to prepare. If you and your family are as greedy as us, you will spend more time preparing the muffins than to eat them all! They are delicious and, like cherries, you will eat them in a row.

We are chocolate addicted, but we can prepare a “white” version replacing the cocoa powder with the same quantity of flour!

Maraschino and Black Cherry Muffins


  • 50 g of butter at room temperature;
  • 100 g of caster sugar;
  • 100 g of brown sugar;
  • 80 g of flour;
  • 20 g of cocoa powder;
  • 2 eggs;
  • 1 pinch of salt;
  • 1 tablespoon of black cherry syrup;
  • 1 tablespoon of maraschino;
  • 1/2 teaspoon of baking powder;
  • black cherry a.r.;
  • pecan nuts a.r..

Preparing the Maraschino and Black Cherry Muffins

Preheat the oven to 180 C.

Arrange some paper cups into a muffin tray.

Divide the eggs yolk from the white. Sift the flour with the cocoa, the baking powder and the salt.

Roughly mince about 5 pecan nuts and keep them aside.

Beat the white eggs, using an electric whisk, until a firm and compact mixture is obtained. Keep it aside.

Cut the butter in pieces and beat it with the two sugar types. Use an electric whisk until a soft cream is obtained.

Always using the whisk, add the eggs yolk. Add the sifted flour few at time.

Pour the beaten white eggs into the obtained mixture. Combine them gently: using a wooden spoon or a spatula, making movements from the bottom to the top.

Add now the maraschino liquor, the black cherry syrup and combine them.

Pour a spoon of the mixture into the muffin paper cups . Add one or two black cherry (it depends on the size of the tray) and cover with another spoon of mixture.

Sprinkle the top of the each muffins with the minced pecan nuts. Bake the muffins for about 12-15 minutes. When this time is over, take the muffins out of the oven and let them cool on a wire rack.

Note: The baking time can vary according to the size of the muffins. To check the cooking, use a skewer: insert it into the center of the muffin and if it comes out clean and dry, they are ready!
