Lukewarm Chickpeas Salad is really easy to prepare. A side dish very nice, perfect to match simple and light second courses.
This can also be used as flavour: if we add some rice or some cous-cous, our salad will be a light and vegetarian first course!
If you are in a hurry or you would like to prepare the salad at the very last moment, you can replace the dry chickpeas with the precooked ones.
Obviously, the precooked chickpeas don’t need to be boiled.
It is good practice to wash them before use. I also suggest to stir the precooked chickpeas in a pan with a tablespoon of oil.
Lukewarm Chickpeas Salad
Ingredients (for 4 people):
- 250 g of dry chickpeas;
- 2 courgettes;
- 1 shallots;
- 1 carrot;
- 1 onion;
- 200 g of cherry tomatoes;
- 80 g of rocket;
- 1 sprig of rosemary;
- sprouts a.r.;
- oil, salt and pepper a.r..
Preparation of the Lukewarm Chickpeas Salad
Put in a bowl the dry chickpeas with enough water to cover them. Leave them in the water for a whole night.
Peel the carrot and slice it in two pieces. Peel the onion and slice it in half.
Drain the chickpeas and keep them aside.
Put the carrot, the onion and the rosemary in a pot and cover them with some water. Bring to boil, add a tablespoon of salt and bring again to boil.
Add the chickpeas and cook them, at low heat, until they get soft (it could take up to about 2 hours). At the end of the cooking, drain them.
In the meantime, slice the shallot and cut the aubergines in cubes. Wash and dry the cherry tomatoes; cut them in slices.
In a nonstick pan warm a tablespoon of oil, add the shallot and stir it for about two minutes.
Add the aubergines and continue the cooking for about ten minutes, stir occasionally
Add then the cherry tomatoes. Season with some salt and some pepper.
Stir and cook until the aubergines get soft. Take care not to make them too soft or they will tear apart.
Turn the heat off and let it cool lightly. Add the chickpeas, the rocket and a tablespoon of oil and gently beat together.
Garnish with some sprouts and serve our Lukewarm Chickpeas Salad.
