Leek Potatoes Bacon Savoury Cake is very easy to prepare. Using few and simple ingredients, we obtain a very tasty dish!
I like it, it is rich in flavour because of the bacon. If you don’t like it or you want to keep it simple, you can replace it with smoked ham, as an example!
This savoury cake could be served like a single course or as main course: it depends on the occasion!
Leek Potatoes Bacon Savoury Cake
Ingredients (for a cake pan of about 20 cm diameter):
- 110 g of flour;
- 90 g of wholemeal flour;
- 1 tablespoon of oil;
- about 100 ml of water;
- 1 teaspoon of instant yeast;
- 1 teaspoon of salt.
Ingredients for the filling:
- 1/2 leek;
- 1 big potato;
- 100 g of bacon in cubes;
- 130 g of ricotta cheese;
- 1 tablespoon of grated Parmesan;
- oil, salt and pepper a.r..

Preparing the filling
Slice the leek; peel the potato and cut it into small cubes.
In a non stick pan, warm two tablespoons of oil and add the leek and the potato.
Cook until they are soft. At the end of cooking, flavour with salt and pepper.
In another pan, cook the bacon without adding fats. When it is brown, remove the excess of fat coming out of the bacon.
In a bowl mix together the ricotta cheese, the vegetables and the bacon. Flavour with salt.
Note: Be careful! The bacon confers a great flavour to the mixture. So, before adding more salt, test taste!
Preparing the pastry
To prepare the pastry for the bottom of the cake, put together all the ingredients, listed for the pastry, in a bowl.
Initially knead the dough using a spoon and then with your hands until a uniform dough is obtained. If necessary, add few water at time.
Let it rest for about 10 minutes.
In the meantime, line the cake pan with a sheet of baking paper.
Roll the dough out to a circle of even thickness of about 3-4 mm using a rolling pin.
Putting the cake together
Preheat the oven to 180° C in convection mode.
Arrange the disc obtained onto the pan. Let the edges of the dough getting out of the pan edges.
Spread the bottom of the cake with the prepared filling. Sprinkle the surface with the grated Parmesan cheese and fold up the dough.

Bake the Leek Potatoes Bacon Savoury Cake for about 30 minutes, or until the surface is golden.
Take the cake out of the oven and let it lightly cool before serving it!
