Kiwis Cake is a soft and fragrant cake. It is perfect for breakfast and as snack. You will fall in love with it at the very first bite! You won’t forget any more this recipe!
This recipe is also very easy and quick to prepare!
I love the sponge of this cake: adding fresh fruit to it results in an increase in flavour! It gets a bit more wet and pleasant to eat!
Ingredients (for a cake pan of 22 cm diameter):
- 250 g of flour;
- 120 g of butter;
- 130 g of sugar;
- 3 eggs;
- 8 g of baking powder;
- 1 pinch of salt;
- 3-4 ripe kiwis.
Preparing the Kiwis Cake
Melt the butter into the microwave or in a small pan and let it cool.
Grease and flour the cake pan.
Peel the kiwis and cut them in pieces. Sift the flour with the baking powder and a pinch of salt.
Preheat the oven to 170° C in static mode.
Using the electric whisk, beat the eggs (at room temperature) with the sugar until a soft and light mixture is obtained.
Add the sifted powders few at time, alternating with the melted butter. Use a electric whisk at low speed.
When the ingredients are combined and a smooth mixture is obtained add the kiwis. Stir gently.
Pour the mixture into the cake pan prepared before. As needed, we can garnish the top of the cake with other kiwis in cubes or in slices.
Cook the Kiwis Cake
Bake the Kiwis Cake for about 40 minutes. Check the cook using a skewer: if we insert it into the center of the cake and it comes out clean, the cake is ready!
Take the cake out of the oven and let it cool.
As needed, we can sprinkle the surface with some icing sugar.
Note: If you don’t like kiwis too much, the same cake can be prepared using others kinds of fruit! The sponge of this cake is neutral and can be garnished according to our taste!
