Preparing the Ham Tuna Courgette Savoury Strudel is very easy. It can either be served as a main course, or as single course. It can be even used as packed lunch.
With the doses I reported below you are going to obtain a great quantity of pastry: therefore, I used half of it. In fact, there are two of us in our family. I froze the remaining part.
Otherwise, the remaining pastry can be used to prepare a sweet strudel!
Ham Tuna Courgette Savoury Strudel
Ingredients for the pastry:
- 250 g of flour;
- 100 ml of lukewarm water;
- 1 small egg;
- 1 pinch of salt.
Ingredients for the filling:
- 350 g of courgettes;
- 1 shallot;
- 150 g of ham in cubes;
- 1 big tuna tin in olive oil;
- 50 g of mozzarella cheese (or another cheese variety you prefer);
- oil, salt and pepper a.r..
Ingredients to garnish:
- sesame seeds a.r.;
- oil a.r..

Preparing the pastry strudel
Sift the flour in a bowl, add the egg and the salt. Stir the ingredients using a wooden spoon; then add few water at time.
When the ingredients start combining together, knead with your hands. Keep kneading until a smooth and uniform dough is obtained.
Grease the pastry obtained with some oil and cover it with cling film (let it in the bowl). Let it rest for about 30 minutes.
Preparing the filling
Wash and dry the courgettes. Cut them in small cubes. Slice the shallot.
Drain the tuna and keep it aside.
In a non stick pan, warm two spoons of oil. Add the shallot and let it sweat. Add the courgettes.
Stir and cook the vegetables for about 10 minutes: they should be lightly crunchy.
Add the tuna and the ham: stir and cook for about 5 minutes. In the process, season with salt and pepper.
Remove the pan off the heat and let the filling cool.
Put together the savoury strudel
Take the pastry strudel.
Note: If you want freeze a piece of pastry, divide it in half. Take one of of the halves and roll it out to an even thickness, onto a lightly floured surface. Arrange the pastry between two baking paper sheets and roll onto themselves. Cover it with cling film and put it into the freezer.
Transfer it onto a lightly floured surface. Gently press the pastry with your fingers. Flour a rolling pin and roll the pastry out to an even thickness.
Arrange the filling onto the centre of the pastry obtained and spread the mozzarella cheese in cubes over it.
Roll the pastry and seal the edges, paying attention.
Note: To ease this passage, we can arrange the pastry onto a clean rug, helping ourselves to roll the pastry!
Grease the strudel top with some oil (using a cooking brush) and sprinkle it with sesame seeds.
Cooking the Ham Tuna Courgette Savoury Strudel
Preheat the oven to 180° C in convection mode.
Line a baking tray with baking paper. Gently, arrange the strudel onto this tray.
Cook for about 45 minutes, or until the surface is brown.
Take the strudel out of the oven and let it cool before serving the Ham Tuna Courgette Savoury Strudel!
