Fish Skewers

Fish Skewers are really easy to prepare! A second course light but anyway rich in flavour and really low in fat. We can prepare this dish at the very last minute!

We can serve the skewers with a portion of rice or cous cous to obtain a balanced dish!

Eating fish is a really good choice because it has a lot of nutritional properties and it grants to our body a lot of advantages. Here they are examples: the fish helps protecting the sight and the skin; it helps the cardiovascular system; it contributes to the development of the intelligence; it keeps away the asthma.

The list of benefits provided by eating fish is very long!

I like eating fish, but I don’t like handling it too much. Thus I can suggest you easy and quick recipes like this Fish Skewers!

They are very tasty and we can prepare them in different ways! We can use the season vegetables and the fish you want!

Fish Skewers

Ingredients (for 2 people):

  • 400 g of mixed-fish (cod, hake, swordfish, squid…);
  • 1 carrot;
  • 1 courgette;
  • small tomatoes a.r.;
  • 1/2 glass of white wine;
  • oil, salt and pepper a.r..

Preparing the Fish Skewers

Peel the carrot and trim the courgette. Slice both of them in a very thin way.

Wash and dry the small tomatoes.

Cut the fish in cubes.

Make the skewers: put together a cube of fish and a slice of vegetables, repeat alternating them until the skewer is full.

Cooking the Fish Skewers

Into a non-stick pan, warm two tablespoons of oil. Brown the skewers on all sides. Simmer with the white wine until reduced.

At the end of the cooking, flavour the skewers with salt and pepper.

Serve the Fish Skewers when they are still hot!
