Fava Beans Focaccia
- 1 shallot;
- 600 g of fava beans;
- 500 g of flour;
- 200 ml of water;
- 1 teaspoon of active dry yeast;
- 1 teaspoon of sugar/honey;
- oil, salt qb.
Preparing the Fava Beans Focaccia
Slice the shallot; put it into a pan with a tablespoon of oil and stir it.
Add the fava beans, stir them to flavour for about 2 minutes; add a teaspoon of salt and one glass of water to help them cooking.
Close the pan and continue with cooking.
In the meantime, sift the flour, the yeast and the sugar in a bowl. Add 3 tablespoons of oil and the water, few at time, combine them with a wooden spoon.
When the fava beans are cooked, remove the excess of water and keep them aside.
Whip the fava beans until a firm cream is obtained. Pour it into the dough prepared before: at the beginning, mix with a spoon then, knead the dough onto a lightly floured surface (take care not to burn your hands!). At last, add 2 teaspoons of salt and combine them.
While kneading, if the dough is tough, add a few of the water used to cook the fava beans and that we kept aside: we shall obtain a soft but not sticky dough.
Put the dough obtained in a bowl, cover it with a clinging film and make it rise until the dough doubles in size.
Cooking the Fava Beans Focaccia
Preheat the oven to the max temperature.
Oil a pizza pan, turn the dough down in the pan and roll the dough out with the hands.
Wash your hands and, without drying them, make some holes in the dough with your fingers.
In a small bowl prepare the marinade: mix together 4 tablespoons of oil, 4 tablespoons of water and one teaspoon of sugar.
Pour the marinade onto the Fava Beans Focaccia.
Bake it for about 20 minutes. Take the focaccia out of the oven and… enjoy!
