Fava Beans and Salami Muffins are very easy and quick to prepare! They are very tasty, soft and flavourful!
They are perfect for a lunch box, for a starter or in occasion of a buffet!
It’s the first time I prepare salty muffins, I don’t know why but I usually prepare them in sweet version!
Many people have lunch at office and it isn’t healthy eating every day a sandwich. So, why don’t you prepare at home a simple and healthy dish for the next day?
In only 15 minutes we are going to prepare a very tasty lunch box, like these muffins!
We can eat them without guilt feeling because they contain low fat. Furthermore, as needed, we can replace the salami with some ham. We could also remove the cured meat to obtain a vegetarian version of these muffins!
Fava Beans and Salami Muffins
Ingredients (for about 8 muffins):
- 125 g of flour;
- 15 ml of oil;
- 115 ml of milk;
- 1 egg;
- 10 cherry tomatoes;
- 50 g of grated Parmesan cheese + 2 tablespoons to garnish;
- 100 g of fava beans;
- salami a.r.;
- 2 teaspoons of instant dry yeast;
- salt and pepper s.r..
Preparing the Fava Beans and Salami Muffins
Preheat the oven to 180° C. Put into a muffins tray 8 paper cups.
Wash and slice the cherry tomatoes. Cut some salami into cubes. Keep them aside.
Put in a bowl the oil, the milk and the egg. Combine them using a fork.
In another bowl put the flour, the yeast, the Parmesan cheese and a teaspoon of salt. Stir the ingredients.
Add the liquid ingredients to the powders using a whisk. Be careful: there shall be no clumps.
Add the fava beans, the salami and the tomatoes.
Note: We can keep some whole cherry tomatoes aside and put it inside the muffins as garnish!
Pour the mixture into the cups, sprinkle the top with the Parmesan cheese and bake them for about 15-20 minutes, or until they are golden.
Take out of the oven and let the Fava Beans and Salami Muffins cool onto the wire rack.
