The Cream and Chocolate Muffins are small pastries perfect for breakfast and as snack.
They are ideal for the chocolate lovers! I love prepare them because they are tasty and they require a very short preparation time!
Cream and Chocolate Muffins
Ingredients (for about 15 muffins):
- 300 g of flour;
- 160 g of sugar;
- 8 g of baking powder;
- 1 pinch of salt;
- 200 ml of whipping cream;
- 200 g of dark chocolate;
- 120 ml of milk;
- 1 teaspoon of rum;
- 2 eggs (at room temperature);
- chocolate chips a.r. (to garnish).
Preparing the Cream and Chocolate Muffins
Preheat the oven to 180° C in static mode. Cover each hole in the muffins tray with the paper cups.
Chop the dark chocolate.
Warm the cream into a small pot, add the chopped chocolate and stir until it melts.
Take the pot out of the heat. Let it cool.
In a bowl sift the flour with the baking powder.
Add the sugar and the salt.
In another bowl beat the mixture of chocolate and cream with the eggs, the milk and the rum.
Note: We can replace the rum with another flavour as needed, for example we could use some vanilla or almond extracts.
Pour the wet ingredients into the dry ones. Stir together with a spoon or a spatula.
We will obtain a quite compact dough.
Fill the cups with the dough using a spoon. With a wet teaspoon, level the top of the each muffins and garnish with some chip chocolate.
Cooking the Cream and Chocolate Muffins
Cook the Cream and Chocolate Muffins for about 20 minutes. Check the cooking with a skewer: insert it into the center of the muffins and if it comes out clean, the muffins are done!
Take them out of the oven and let cool onto the wire rack.
