Courgette and Cheese Savoury Croissants are very easy to prepare. They are appetizing, but also low in fat.
They are perfect as starter, but we can realize them for our lunch box to bring at work: they are handy!
Courgette and Cheese Savoury Croissants
Ingredients for the pastry:
- 140 g of flour;
- 2 tablespoons of oil;
- water a.r.;
- 1 pinch of salt.
Ingredients for the filling:
- 2 courgette;
- 1/2 leek;
- 150 g of ricotta cheese;
- 1 egg yolk + 1 white egg;
- 16 pieces of cheese like cheddar;
- grated Parmesan cheese a.r.;
- parsley a.r.;
- basil a.r.;
- oil, salt and pepper.
Preparing the Courgette and Cheese Savoury Croissants
Preparing the pastry
In a bowl stir together the flour, the salt, the oil and half glass of water. Keep adding few water at time until a uniform and soft dough is obtained.
Cover with cling film and let it stand for at least 30 minutes.
Preparing the filling
Cut the courgette in cubes and slice the leek.
In a non-stick pan warm a spoon of oil.
Add the courgette cubes, the leek slices and some leaves of parsley and basil.
Add half small cup of water and cover with a lid. Cook for about 10 minutes, or until the vegetables are soft, stirring occasionally.
Let it cool.
In a bowl stir the ricotta cheese with the egg yolk. Flavour with salt and pepper. Add the vegetables and stir them.
Making the croissants
Preheat the oven to 180° C in convection mode.
Flour a surface and roll the pastry out We must obtain a big and thin disc.
With a knife or a pizza cutter, cut 16 slices.
On each base, arrange a spoon of the filling we prepared and a cube of cheese.
Roll each slice, from the base to the point, to obtain a croissant. Do this procedure gently, sealing the filling inside the pastry.
Baking the croissants
Line a baking tray with baking paper. Arrange the croissants onto it. Spread the surface with the white egg and sprinkle the top with some Parmesan cheese.
Bake for about 20 minutes, or until they are golden.
Take the Courgette and Cheese Savoury Croissants out of the oven and let them slightly cool lightly before serving them!
