Cocoa Tarts with Jam are sweets delicious single servings treats! They can be served as dessert, snack or even for breakfast!
They can be garnished with jam or chocolate cream. If needed single big tart can also be prepared!

Preparing the shortcrust pastry
Prepare the shortcrust pastry proceeding like explained in the cocoa shortcrust pastry recipe page.
Rolling out the pastry and cooking the tarts
Preheat the oven to 170° C in convection mode.
Take the cocoa shortcrust pastry out of the fridge. Knead it quickly to make it malleable.
Put the pastry between two baking paper sheets and roll it out to an even thickness of about 5 mm. Grease and flour a cake pan of 24 cm diameter or 6 small tart pans.
Single servings tarts:
If you are going to prepare single servings tarts like I did: cut six discs with a round cutter. The cutter diameter shall be slightly bigger than the diameter of the small pans. Arrange the pastry discs onto pans and make the pastry stick to their edges.
Single big tart:
If you decide to realize a big tart, it’s a bit more difficult lying the bigger disc but we can help ourselves with the baking paper to turn the pastry disc out onto the pan. Hold the edges of the baking paper and turn the pan out again. Make the pastry edges stick with the pan edges and remove the baking paper. Cut the excess of the border of the pastry, if any.
Cover the pastry surface with a lot of jam and spread it uniformly. Garnish the tart or the small tarts with the remaining pastry. You can cut it in lines (as I did per picture below) or any other shape you want.
Bake for about 30 minutes.
Take the Cocoa Tarts with Jam out of the oven and let cool.
