Cocoa Almond Biscuits are delicious! These cookies are lightly soft, perfect for breakfast and as snack! You can match them with a cup of cappuccino or coffee. In fact, plunged into milk or coffee they get even better.
You can realise them watching a small video tutorial I prepared for you, showing the process to be followed!
Cocoa Almond Biscuits
- 125 g of flour;
- 25 g of almond;
- 60 g of sugar;
- 50 g of butter;
- 15 g of cocoa;
- 1 egg;
- 8 g of baking powder;
- 1 pinch of cinnamon (optional);
- 1 pinch of salt;
- strawberry/apricot jam;
- chocolate cream.
Preparing the Cocoa and Almond Biscuits
Blend the almonds using a blender.
Note: You can also use the almond flour. You can buy it in the supermarket.
Sift the flour with the cocoa, the baking powder and the cinnamon (if you like it!). Then, add the blended almonds.
In the same way, add the butter in cubes and knead with your fingers until a sandy mixture is obtained.
Furthermore, add the egg and combine it. Finally add the sugar and the salt.
Knead until a uniform pastry is obtained. Cover it with cling film and transfer it into the fridge for about 1 hour.
Line a baking tray with baking paper. Preheat the oven to 180° C in convection mode.
Take the pastry out of the fridge and divide it into small balls, more or less the size and shape of a nut.
Arrange the biscuits onto the prepared tray. Make a small hole into each biscuit using your finger or the handle of a pastry cutter.
Bake the biscuits for about 10 minutes. Take them out of the oven and trace again the holes. Fill them with some jam or some chocolate.
Bake again for about 3-5 minutes. Finally, take them out of the oven and let them cool.
