Chocolate Plum cake with the Heart

Chocolate Plum cake with the Heart is a very easy to prepare but eye catching sweet! Preparation is a little bit laborious because this recipe requires two dough: one for the hearts and one for the plum cake itself.

But it is nice and exciting to prepare and taste it. When you are going to cut the first slice… wow! I would like to be there and see your faces!

This plum cake is perfect for the breakfast and also as snack. Its perfect companion could either be a cup of milk or a glass of fruit juice!

Chocolate Plum cake with the Heart

Ingredients for the hearts:

  • 200 g of flour;
  • 100 g of butter;
  • 80 g of sugar;
  • 2 eggs;
  • 2 teaspoons of baking powder;
  • 2 teaspoons of vanilla extract;
  • 60 ml of black sherry syrup;
  • fuchsia/red food colouring .

Ingredients for the chocolate plum cake:

  • 325 g of flour;
  • 150 g of butter;
  • 120 g of sugar;
  • 2 eggs;
  • 150 ml of milk;
  • 3 teaspoons of baking powder;
  • 2 teaspoons of vanilla extract;
  • 50 g of dark chocolate;
  • 2 teaspoons of cocoa powder.

Preparing the Chocolate Plum cake with the Heart

Preparing the hearts

First of all we have to prepare the dough for the hearts.

Preheat the oven to 180° C in static mode.

In the meanwhile, melt the butter and let it cool. Sift the flour with the baking powder, the vanilla and keep them aside.

Divide the eggs yolk from the white and put them into two different bowls.

Beat the white eggs with an electric whisk until they are stiff. Once done,  keep them aside.

Beat the eggs yolk with the sugar, using the electric whisk until a spumy and lightly dough is obtained.

Add the melted butter few at time. Add the sifted powders little by little, alternating with the black cherry syrup, until a uniform and smooth dough is obtained.

Now, add the food colouring, just enough to get a bright colour.

As last, add the white eggs, using a wooden spoon with movements from the bottom to the top: be careful not to break the dough down .

Grease and flour a square cake pan of about 20 cm x 20 cm. Pour the dough into this pan.

Bake the cake for about 20 minutes. Check the cooking using a toothpick: insert it into the cake and if it comes out clean, the cake is ready to be taken out of the oven.

Let it cool. Cut the cake with a heart shaped cutter. Keep the hearts aside for a while. We will need them later on.

Preparing the plum cake

Now let’s prepare the chocolate plum cake.

Melt the chocolate using the “bain-marie” method or using a microwave. Add the butter and leave it melt. Mix with the chocolate. Let it cool.

Sift the flour with the cocoa, the baking powder and the vanilla. Keep them aside.

Divide the eggs yolk from the white and put them into two different bowls.

Beat the white eggs until they are stiff, using the electric whisk. Keep them aside.

Using the electric whisk beat the eggs yolk with the sugar. When they are light and spumy, add the melted chocolate dough, little by little and combine them.

Add the sifted powders little by little, alternating with the milk, until a uniform and smooth dough is obtained.

Last but not least add the white eggs, using a wooden spoon with movements from the bottom to the top: don’t break down the dough.

Putting it all together and cook the Chocolate Plum cake with the Heart 

Preheat the oven to 180° C in static mode.

Grease and flour a loaf pan. Pour 1/3 of the dough into it and level it.

Arrange the hearts in a row, each close to the other.

Pour the remaining dough over the hearts. Spread the dough out and level it using a wet spatula.

Bake the plum cake for about 45 minutes.

Take the plum cake out of the oven and let it cool for about 1 hour into the loaf pan.

Pull the cake out of the pan and roll it up in the aluminium foil, so as to maintain it compact.

When the Chocolate Plum cake with the Heart is completely cool, we can sprinkle the top with icing sugar.

Optional Decoration

If you’re willing to further decorate it, as I did, you will need some icing. To prepare the icing, take a small bowl and pour into it: 4 tablespoons of icing sugar and 1 tablespoon of cherry syrup. Mix them together. If needed, we can keep adding the syrup until a thick cream is obtained.

Move the icing into a small cone and decorate the Chocolate Plum cake with the Heart.
