Chocolate Muffins are very quickly and simple to make! I love them: they are soft and rich in chocolate flavour!
These muffins are ideal served for breakfast and with a cup of tea for a snack!
Chocolate Muffins
Ingredients for about 8 portions:
- 125 g of butter;
- 100 g of sugar;
- 2 eggs;
- 200 g of flour;
- 15 g of cocoa powder;
- 1 teaspoon of vanilla powder;
- 16 g of baking powder;
- 1 pinch of salt;
- 50 g of dark chocolate flakes.
Preparing the Chocolate Muffins
Preheat the oven to 180° C and grease a 8 cup muffins tin.
Combine the butter and the sugar with a spoon until the mixture is soft and smooth.
In this mixture add one egg at a time using an electric whisk.
Sift together the flour, cocoa powder, vanilla, baking powder and salt. Add the powders into the mixture prepared before.
Mix until all the ingredients are combined. Finally add the dark chocolate flakes, keeping a little of them aside.
Spoon the batter evenly into the prepared muffin pan. Top each with the remaining chocolate flakes.
Bake them for about 20 minutes or until a skewer inserted into the centre comes out clean.
Stand in pan for 15 minutes before transfer them to a wire rack to cool completely.
