Chicken Vegetables Pie is a comfort food style dish: I think it is delicious! A rich main course. We can also serve it as a single course!
A soft and creamy filling is enclosed in a crunchy pastry, very appetizing!
To realize this recipe I used two single serving oven pans of 14 cm diameter. Alternatively, we can prepare a big one!
Chicken Vegetables Pie
Ingredients for the pastry:
- 200 g of flour;
- 80 ml of water;
- 1 tablespoon of oil;
- salt a.r..
Ingredients for the filling:
- 250 ml of vegetable broth;
- 25 g of flour;
- 25 ml of oil;
- 400 g of chicken breast;
- 1 carrot;
- 1 shallot;
- 1 courgette;
- 60 g of peas;
- 1 potato;
- oil, salt and pepper a.r..
Preparing the Chicken Vegetables Pie
Prepare the pastry: knead the flour with the water and the oil until a uniform dough is obtained.
Cover the dough with cling film and let it stand for about 30 minutes.
Prepare the vegetables: wash, peel and cut them in small cubes.
Cut the chicken breast in cubes, too.
In a non-stick pan warm a tablespoon of oil. Add the shallot, the carrot and the potato. Cover with a lid and cook for about ten minutes. Stir occasionally.
In the meantime, in another pan, warm 25 ml of oil. Add the flour and stir it. Add the vegetable broth little by little, stirring.
Cook until a cream is obtained. Flavour with salt and pepper.
Add the courgette, the peas and the chicken into the pan with the other vegetables. Add also the cream prepared and stir to combine all the ingredients.
Cook for about 5 minutes, then turn the heat off. Season it with some salt. Cover with a lid.
Preheat the oven to 180° C.
Now, let’s focus on the pastry.
Divide the pastry into 8 small balls. Roll each ball out to obtain a very thin disc. For each oven pan, 4 discs are necessary.
Divide the chicken and vegetables filling into the oven pans.
Wet the sides of the oven pans with some water. This allows to stick the pastry to the pan.
Cover each oven pan with one pastry disc. Brush the surface with some oil. Arrange another pastry disc onto the first one. Repeat for the other 3 discs.
With a knife cut the excess of pastry. Make some small holes with a fork onto the pastry surface.
Brush the top of the pie with some oil and bake the Chicken Vegetables Pie until they get golden.
