Chicken Vegetables Noodles is an oriental style dish, very tasty and rich in flavour. It is very healthy and low fat.
This recipe can be prepared very quickly.
Chicken Vegetables Noodles
Ingredients (for 2 people):
- 120 g about of rice noodles;
- 400 g of chicken in cubes;
- 1 carrot;
- 1 courgette;
- 1/2 leek;
- 1 shallot;
- 2 cups of peas;
- 2 cups of vegetable broth;
- soy bean sprouts a.r. to dress;
- soy sauce a.r.;
- 1 tablespoon of curry;
- oil, salt and pepper a.r..
Preparing the Chicken Vegetables Noodles
Peel and cut the carrots in sticks.
Trim the courgette and cut in sticks, too.
Slice the shallot and the leek.
In a pot warm the vegetable broth (about 2 cups).
In a non-stick pan warm 2 tablespoons of oil. Add the shallot and cook for about two minutes. Stir it in the process.
Add the leek, the carrot, the courgette and the peas to the shallot. Some soy bean sprouts can be added as well. Stir and let them flavour. Cook for about 10 minutes.
The vegetables shall be soft but not overcooked. At the end of cooking, season with salt and pepper.
In the meantime, in another non-stick pan, warm 2 tablespoons of oil. Put the chicken into the pan and let it brown, stirring. Add a cup of broth, a tablespoon of soy sauce and a tablespoon of curry. Cook for about ten minutes.
Bring to boil the water to cook the noodles. When the water is boiling, cook the noodles for about 2 minutes.
Drain the noodles and put them into the pan with the chicken. Add the vegetables too and combine them. Stir well to unravel the rice noodles. Add some vegetable broth if the sauce dries.
Add a tablespoon of soy sauce and serve the Chicken Vegetables Noodles when they are still hot. As needed, dress it with soy bean sprouts.
