Chicken Thighs and Potatoes in the Oven

Chicken Thighs and Potatoes in the Oven is a complete and tasty dish. This recipe is very easy to prepare.

The cooking time is a little bit long, but the preparation is very short!

You can prepare the chicken thighs with other vegetables. You can choose them depending on the season and your preferences.

Chicken Thighs and Potatoes in the Oven

Ingredients (for 2 peoples):

  • 2 chicken thighs;
  • 300 g of early potatoes;
  • 1 carrot;
  • seasoning of your choosing (rosemary, oregano,…);
  • oil, salt and pepper a.r..

Preparing the Chicken Thighs and Potatoes in the Oven

Line a baking tray with baking paper. Preheat the oven to 190° C in convection mode.

Wash the potatoes, without peeling them; peel the carrot. Dry them all.

To obtain an even cooking, cut the bigger potatoes in halves. Cut also the carrot, more or less the same size of the potatoes.

Put the vegetables in a bowl. Dress with 2 or 3 spoons of oil; flavour with salt and pepper. Add the herbs and spices chosen. I used rosemary and laurel.

Stir them with your hands. We must grease very well all the vegetables.

Arrange them onto the tray prepared before.

Wash and dry the chicken thighs. Make two engravings on each of them.

Brush the thighs with a spoons of oil, some salt and pepper. Arrange them among the vegetables.

Bake them for about 40-45 minutes.

Take the chicken and the vegetables out of the oven and serve them while still hot.
