Carrots Peas Chicken Bites is a main course easy and quick to prepare. It is a colourful springy dish, rich in flavour and low in fats!
Carrots Peas Chicken Bites
Ingredients (for 3 people):
- 400 g of chicken in cubes;
- 250 g of carrots;
- 250 g of peas (already shelled);
- 150 g of fava beans (already shelled);
- 1/2 onion;
- flour a.r.;
- basil leaves a.r.;
- oil and salt a.r..
Preparing the Carrots Peas Chicken Bites
Peel the carrots and cut them in thin slices. Slice the onion.
In a non stick pan warm a spoon of oil and two spoons of water. Add the onion and let it sweat.
Add the carrots and stir them. Cover the pan with a lid and cook the carrots for about 5 minutes. Cook at low heat.
In the meantime, cover the chicken cubes with flour.
Note: We can use the frozen or precooked peas and fava beans. In the first case we should add them at the same time of the carrots. If we use the precooked ones, we should add them some minutes before completing the chicken cooking.
Add the chicken into the pan and stir it. Cook for about 5 minutes and then add the peas and fava beans.
Flavour with some leaves of basil: mince them with your fingers. Stir the ingredients and cover with a lid.
Cook for about 5 minutes. Remove the lid and season with some salt and pepper. Carry the cooking on until the chicken is completely cooked.
Serve the Carrots Peas Chicken Bites dressing with a spoon of oil and garnish it with some leaves of basil.
