Bread with Seeds

Bread with Seeds is prepared with the sour-dough. This recipe is very easy: it require few handwork and attention.

I often prepare this bread, it is a daily bread for us! I love it: the top of the brad is crunchy while the inside is tasty and soft at the same time.

Bread with Seeds


  • 180 g of ripe sour-dough starter;
  • 340 g of flour;
  • 160 ml of water;
  • 1 teaspoon of honey;
  • 2 teaspoons of salt;
  • 2 tablespoons of sunflower seeds;
  • 2 tablespoons of pumpkin seeds;
  • 1 tablespoon of flax seeds.

Preparing the Bread with Seeds

Preparation day 1 – 1.30 p.m.

Put the sour-dough into a bowl. Add the water add the honey, stir using a fork until the sour-dough is melted.

Add the flour and start to knead. If we have a kneader, we shall use a hook; otherwise we can use a wooden spoon.

When the water is absorbed, transfer the dough onto a lightly flour surface. Add the salt and hand-knead for about 5-10 minutes.

Add the seeds and combine them into the dough. “Pirliamo” the dough in a ball.

Grease a bowl with oil and put the dough into it. Grease with oil the dough surface, as well.

Cover with cling film. Transfer the dough into the fridge for all night.

Preparation day 2 – 7.00 a.m.

Take the dough out of the fridge. Let it at room temperature for about 2 hours.

Line a loaf tray with baking paper.

Turn the dough out onto a surface and press it with the hands. Roll the dough and put it into the tray prepared.

Let it to rise until doubled in size.

Baking the Bread with Seeds

Preheat the oven to 180° C in convection mode.

When the bread is doubled in size, spread the top with some olive oil and sprinkle the surface with some seeds as needed.

Put a small pot filled with water onto the bottom of the oven.

Bake the bread for about 40-45 minutes. Take the small pot out of the oven and carry the bake on for about 10 minutes, keeping the oven a slightly open.

This method is useful to remove the moisture created inside the oven during the first part of baking. It will help us obtaining a crusty crunch.

Take the Bread with Seeds out of the oven and let it cool completely before slicing it.
