Bacon Tomatoes and Spinach Pasta

Bacon Tomatoes and Spinach Pasta is a complete and very tasty first course. We can prepare it at the very last minute since it’s very easy and fast to prepare!

The bacon gives a lot of flavour to the sauce but, if you want to prepare a lighter version, you can replace it with ham cubes!

Bacon Tomatoes and Spinach Pasta

Ingredients (for 2 people):

  • 180 g of short pasta;
  • 150 g of bacon in cubes;
  • 15 small tomatoes;
  • 50 g of fresh spinach;
  • grate Parmesan cheese a.r.;
  • oil, salt and pepper a.r..

Preparing the Bacon Tomatoes and Spinach Pasta

Put a pot of water to boil. We will need it to cook the pasta.

In the meantime chop 2/3 of bacon. Put it all into a nonstick pan, without adding fat. Cook it at medium-to-high heat until the excess of fat in the bacon is released.

Cut the tomatoes in small pieces and keep them ready to be added to the bacon.

Cooking the Bacon Tomatoes and Spinach Pasta

When the water is boiling, add some salt and add the pasta. Cook the pasta for about 10 minutes or as much as reported on the pasta package.

Add the spinach (keep some leaves aside) and the tomatoes to the pan with the bacon.

Once either the time is over or the pasta is cooked, dry it and pour it into the sauce prepared. Let it stir for a minute at high heat while mixing and combining it.

Serving the Bacon Tomatoes and Spinach Pasta

Serve the Bacon Tomatoes and Spinach Pasta in a deep dish while still hot. Dress the pasta with some grated Parmesan cheese and add the spinach leaves we kept aside.
